Sadly, the thread I started yesterday was lost in the crash so I'll start over. Can one substitute lime juice in place of lemon juice in a lemon meringue pie recipe? Yes, I know about key lime pie. Had a slice last night, and I do enjoy it. But, key lime pie is a totally different style than lemon meringue pie. I have always thought that the same texture filling in lime would make a good pie. So the big question is: Why not ?

You try it, then let us know ;)

Actually, I thought it sounded like it would work but I have really screwed up some things like that before so I kept quiet :)

Some further searching produced several lime meringue pie recipes, all similar, but not exactly the same. A search on lemon meringue pie produced the same results. It looks like the lime pie recipes are lime specific, not just substituting lime juice for lemon juice with a lemon pie recipe. I'll try to get my son, the baker, to make one and try it.
