Atkins friendly lasagna

    Take your favorite recipe for lasagna and substiture the noodles for Tofu.

    ...I know...Eeewwwwww

    You will never know the differance.

    What you do if get extra firm tofu and cut it into strips and layer it like you would the noodles.

    I swear that it will taste almost identicle as the noodles.

    I'm about to have some right now...

    YUMMY!!!

    Please don't turn this into an atkins fight....please.

    I do the same thing, but I use eggplant instead of tofu. Much more to my taste than tofu.

    I do the eggplant version too.

    I also make lasagana with Patty Pan squash. They are white and "flat" with a daisy shape. Sorta like a UFO, if that makes any sense. You will have to find seed and grow them yourself as they are pratically impossible to find, even in fruit and farmer's markets. I have never saw one in a grocery store. The world has no idea what it is missing:(

    As far as I know any...The second at the least.

    You need to take into account the carbs in the sauce and cheese.
