Appetizer cookoff

    At Texas Tech we have an appetizer cookoff every year. There really are no rules for the cookoff. It says appetizers but we have seen everything from fried turkeys to hamburgers so I guess everything is fair game really. The only thing is that we have to feed A LOT of people. We won the cookoff one year with bacon and jalepeno wrapped dove breasts. I wanted to make these again this year but unfortunately we didnt have a very sucessfull dove season. Does anybody have any suggestions? Prefferably something that can be prepared beforehand and then cooked on a grill.

    for me it would be grilled squid or frog legs with sour cream sauce.

    The bacon and jalapeno wrapped concept is nice. You could use sausage as suggested above for a meat center or switch to something sweet to contrast with the heat of the jalapeno and salt/fat of the bacon.

    Bacon and half jalapeno wrapped pineapple chunks from the charcoal grill?
    Bacon and half jalapeno wrapped chocolate dipped strawberry?
    Jalapeno dipped in chocolate and them wrapped in bacon?

    For something milder use cubanelle pepper slices or a milder pepper.

    Hmmm. I am getting hungry just thinking up ideas.
