anyone have a recipe for...

    Babba ghannouj, or however you spell it? I know it involves chick peas and eggplant, kind of like a veggie-laced hummus. The local co-op has it, but it's almost a buck an ounce. Ideas?

    You need to make this recipe to taste as the ingredients have varying degrees of flavor. A basic recipe is:

    2 medium eggplants; poked all over with a fork
    4 cloves garlic, crushed
    1/4 to 1/2 cup tahini (sesame paste)
    juice of 1 to 2 lemons
    1/2 cup finely chopped parsley
    chopped scallions or chives
    salt, freshly gound pepper, and extra virgin olive oil to taste

    Preheat oven to 400 degree F. Place eggplants on a pan or on aluminum foil and roast until dark and totally collapsed (~45 minutes). Remove from oven and cool until you are able to handle them. Scoop the inside out of the eggplants and mash well. Add the rest of the ingredients, except for the olive oil, TO TASTE. Chill the baba ghanouj thoroughly. Adjust the seasoning prior to service and drizzle with EVOO immediately prior to service. Goes well with toasted pita triangles, veggies, feta cheese and olives. A little hot sauce, cayenne, or hot paprika sprinkled on top are also welcomed additions!
