you cut up peppers, Squash(yellow and zucchini) onions and tomatoes. Coat them with olive oil salt and pepper in a 9 by 13 pan, roast in oven for 25 min turning once. (maybe some cloves of Garlic) Remove from oven roll out a sheet of puff pastry to the same size. shave some Parmesan with peeler over veggies. Drizzle 2 Tablespoons of Balsamic vinegar over the veggies. Tuck in pan down the sides over the veggies. Back in the oven for 15 minutes till puffed and browned. remove let sit for 5 min invert on suitable platter. Shave some more cheese over the tart. (I cut up floured and Browned on both sides well ( cooked) set aside 2 chicken breasts.) This I put over the veggies just before the pastry. Note: It was OK with the chicken but the roasted veggie part was great.
