Spicy Recipe Favorites

    Glockerel Got Mojo?

    I've had a request or two for the recipe for my Jamaican Wings. They are simple to make and hotter than a three peckered billie goat.

    Anyone got hot recipes they'd like to share?

    Jamaican Wings

    3 lbs chicken wings, tips removed, seperated at the joint.

    The Sauce:
    In a food processor or blender-

    2 bunches green onions, roots removed
    1 package thawed frozen spinach, drained
    5 habanero peppers, stems removed. You could use jalapenos if you want this not so hot.
    1/2 cup lime juice- bottled is fine
    1/2 cup soy sauce

    Blend this until the onions are broken down. It should still be pretty chunky.

    Place in saucepan and add:
    1 tsp ground allspice
    1 tsp freshly ground black pepper
    1 tsp salt

    Simmer this for about an hour. You can use right away or refrigerate.

    To make the wings:

    Pat wings dry and deep fry in oil(best) or bake until cooked through. Place wings in large bowl and toss with the heated sauce.
    Transfer to serving platter, sauce and all and serve.

    Recipe is simply Jamican Jerk of which the three main ingedients are Scotch Bonnet (Habanero) peppers, Allspice (pimento berries, not the pumpkin-pie spice), and scallion.

    Jerk is GOOD.

    Singapore Chili Crab is a wonderful spicy dish but haven't tracked down a good recipe for it in the US. If someone has one, perhaps they could share.
