Chocolate Souffle

  1. Here is a great recipe that is pretty easy but will make you look like a star.

    3 egg yolks
    6 egg whites
    1/3 cup sugar for egg whites
    more sugar for ramekin
    6 oz chocolate (I have used semisweet, milk, and milk & White mixed)

    4-6 cup ramekin
    electric mixer

    Pre heat oven to 375*F

    rub inside of ramekin with butter, pour a few table spoons of sugar in ramekin and shake around to coat all surfaces.

    melt chocolate in double boiler over medium heat.

    Beat whites on medium speed to soft peaks, slowly add sugar while beating on high, continue till stiff peaks, set aside.

    Beat yolks for 1 min, now slowly add a few spoonfuls of chocolate while beating to temper yolks, add yolk mixture to rest of chocolate off of heat.(mixture will stiffen)

    mix 1 cup of stiff egg whites into chocolate/yolk mixture(will loosen mixture)

    Fold chocolate mixture into the remaining egg whites, then pour into ramekin.

    Bake for 24-26min on middle rack.

    serve immediately with fresh berries & whipped cream, or fruit based sauce, or chocolate suace.
