Chaos v. Order; which are you?

    It's looking to be a beautiful weekend on the mid-Atlantic seaboard. Low to mid 80s today, although upper 80s Saturday and Sunday. Mostly sunny, probably some light breezes. I may do some gardening and maybe put a pork shoulder in the smoker.

    :crying: Well, I only have the one shoulder handy. It's about 12 lbs though so it will keep me eating at least through Monday.

    Sad that I'm the only person in the house who eats it.

    Doc, you do realize that is practically, oh heck it IS "pork porn" I don't suppose we could do a mass E-mail of the pics to places like Tehran? They don't know all the goodness they are missing.

    I have to buy the raw material at the store to make my own sausage these days, it jus t isn't the same.

    I feel for ya bro. I use 1/3 venison and 2/3 feral sow to make my sausage. Summer, breakfast, Italian.... Hot and mild of all three. Still wearing a 32 size waist. Just run more.



    In Texas, it's open season on hogs. All you have to have is a basic hunting license. No limit. No season. Very few rules. You can trap them, snare them, shoot them from a helicopter, poison them (we don't), run them down, whatever.



    I prefer smoking them.

    We don't have a shortage of venison around here. Once in a while, bear but I really cut that and only use it in cooked sausage. Elk works nice. I like most of the game meat in less spicy sausage.

    Hey, Doc, do you have the recipies written down? I actually have a bunch but there aren't many that are ALL that different.
