For an outdoor knife which steel is better?
1095 is an old steel that is used in a lot of knives, the Ka-Bar Marine, and a lot of the older military knives. I that been given a new life since they added "Cro-van" to the title. Since I assume they are trying to hint they have added chromium and vanadium to it or at least more.
It is amusing to me the prices some manufacturers chage for knives made of 1095. I have some around my shop and have used it quite a bit in knives. It is 'good" but not "great" and it is one of the least expensive steels to buy.
I don't have any experience with 4116 since forging stainless is problematic and I don't care for some of the tempering hoops and the manufacturing characteristics of stainless.
Not knowing what knife/maker your are considering, I would say off the top, that if the model was the same and the price was close I would opt for the 4116, at least you get the rust resistance.
Don't get me wrong 1095 is OK but I could give you chapter and verse on how big the markup is on a knife made of it. there are other carbon steels that IMO are better but most manufacturers have decided you get 1095 or "1095 cro-van" and that's it if you want carbon steel.
