Remember that movie cameras have gyroscopic stabililzers in the carriage, so they are steady at speed. In another McQueen flick, "LeMans", a Ford GT 40 was used as a camera platform, and the cars WERE very close to actual racing speeds, some of the footage was shot DURING the actual LeMans race.
