Rabbi, they end up with 61% ONLY because we let them.
You & I know that with the help of Geesie & Eng151515 we can alter the %%%'s any time we desire to do so.

Hey there was a fresh opossum road kill, some Cajun Seasoning slow cooked, drain the excess grease, de bone, run it thru the food processor and that should make great pate'!

Spread generaously over Sesame Seed Crackers...

No, not a bad thing.
What do you call it when you cook something with a LOT of salt? I hear that is how you cook those.
Of course, being a city boy, all I get in my backyard is squirrels, possums, and rats. It's been years since I spotlighted any raccoons in the yard. But, I've been tempted to do one of those Survivorman / "in your own backyard parodies."

I've got a birthday coming up and I've put a bug in my wife's ear to let me upgrade from my four quart slow cooker to a six quart cooker. I just can't get a cabbage and a possum into my current crockpot.

The main thing with any animal is glands! You must get the glands out otherwise the meat will have a strong musky taste.

Now for Mr Coon, I like'em well seasoned then roasted in gravy with garlic & onions!
