I'm not worried about saltwater impairing function, more just concerned that I'd have to clean it three times a day to avoid rust.

That said, I think I may just build up something based on the last released parts sheet for the old MEU(SOC) 1911.

You don't have to clean it three times a day to avoid rust. Once a day is plenty. Also, it's not "cleaning" if you were not to shoot it. Wipe it down with new lube is hardly a bother.

$300 worth of magic coating is a lot of gun oil...I'm just saying. But hey, finishers gotta make a living too.

We'll see, I suppose. Salt water can do some nasty things to metal. But, the gun I'll be taking a lot of build cues from was simply Parkerized, and it held up for decades, so you may be right.
