They are a nuisance.

And yes, some people skin them and use a sharp round cookie cutter to make fake scallops but the texture and taste are different if you are familiar with sea scallops.

So the "bait ball" is put in the water to attract the shrimp, then you net them? Dang, I never did that. It sounds awesome. What size net?

I was never any good at the bigger nets. I was just never trained properly.
Now, the 3 footers I could sling like a bullet. I'd sprint across the shallow flats and get a bead on the mullet from their wakes and lead them by about 3 feet.
But the shrimp thing sounds a lot more relaxing. How deep?

I had a couple of buddies in HS that sold rays to a local restaurant in Florida that was pretty well known for their "bay scallops".
