The answer to what to do with three days off: wash your jeep, vacuum out 5 months worth of dirt and leaves, then go ride your 4-wheeler with your son until you run out of gas in the middle of nowhere because you were too stupid to look to see how much gas you had. And that's just day 1!

My wife gags at the thought of pork rinds, personally I could eat them every day, but the cardiologist says that will kill me like everything else I like about life.

and for the record hot sauce makes any food better, hell I'd put hot sauce on Corn Flakes!

Those things grow wild in damp places where the weather is about right, and colonies of them are established. A person so interested in doing so can buy a spore set, and grow those at their own place. They are seasonal, and normally only pop up in early to late spring around here. There are people who I know personally who pride themselves on their ability to find those in the wild, and are tight lipped about their locations. Some folks actually sell what they deem as more than what they can use themselves, as a side gig during the harvest season.

When they are up and growing, I can pick on average 8-12 a day at a spot not too far from me, unless the deer get to em first. Speaking of, morels with scallions and venison steak is by far my favorite way to eat them

You do know Kimchi is Korean... unless you mean the sour pickled cabbage Chinese type Kimchi... which doesn't go with rice that well.

But yeah, I see Korean Kimchi with Chinese buffets all the time.

Personally, give me some pork rinds. Never had bad pork rinds. Heck, I eat pork rinds with my Chinese food buffet when it's offered... which is never. So I have to bring my own. The owners don't like that very much though.

Yes indeed. Some of the owners of Chinese restaurants supplement their buffet with other items that are not Chinese, because people like it. I'm good with it. I would like some real Chinese cuisine without all of the sauce being on the entrees most of the time. Not that it doesn't taste good. I have had it before and it was also very good.

Come out here, I'll show you good Chinese food. There's so much Chinese food out here you can eat at a different restaurant every day and not repeat a place for 3 months, and that's just in my little suburb.

Sometime after I retire I may have to visit, if I am not working elsewhere for a minute. We have a small Chinese community in Kansas City, I will have to visit some time. I just don't remember where they are located. We have a lot of different people in the area. But, Kansas City is much smaller in comparison with your part of California.

I actually had been out there to KCMO and visited Leavenworth. It was snowing then but man, the college kids were partying up a storm anyway.
