If you buy a colt you won't regret it. I like series 80's myself and lightweight model at that. You can pick up used colts cheaper than you think. I have seen brand new stainless steel lightweight commanders in the 850 range thats what I would buy.
I'm building my latest 1911. RIA Frame, Fusion slide and small parts and a colt barrel. I have everything together and have fitted the safety and ensured all safety features work. Hope to test fire it this weekend, then have it cerakoted desert tan to go with the cz ETC Frag Dirty Olive g10 grips.
maybe a used Dan Wesson RZ-45 Heritage? Dan Wesson is g2g and well made and down the road can still have some work done if you like?!

I also had no need for NV, so I went with the 512. As far as the submersion, if I'm 10 feet under water and still holding onto my rifle, something has gone terribly awry and I don't think an extra 23 feet is going to matter to me. YMMV
