Depends on the reason/scenario.
If I had to have one of my guns that I needed in this kind of place to do most everything, it would be my G27.
If it were a SHTF scenario, the first one I would grab would be my G35

My Les Baer 1911 45 ACP. It’s not the most practical carry weapon, but Ihave yet to find a gun that will fit my hands the way a well-built 1911 can. Theaccuracy more than makes up for the lower round count.

My G26 as it can be concealed and take all my G19 and G17 mags...
It would be very hard to get rid of my pre lock SW 686 Plus...

Probably the cheap 1911 I slapped together just to see if I could make a build work. Used minimal generic tools with standard parts, nothing special. But it all came together and worked. It probably has the worst trigger of the entire collection but this one I could not let go of.

I only have one, my wife won't allow more than one for each of us at a time, if it's per person, we'll keep what we have now, she'll have her j frame 357 on her side of the bed and I'll have my G17 with me all the time due to her rule I've been through about 10 different glocks (is there another brand??) and just recently came back to a 17, fits me best, I shoot it best, I lie it best!!

If I could keep only one, I guess it would be one of my 9m/m Beretta 92FS pistols. The abundance of parts and mags makes it desirable. Adding a 96FS slide and barrel adds the .40 S&W option to it also.

I was thinking the very same question the other day about which pistol I would keep if I could only pick one.
Very tough decision! In fact, an extremely tough decision.
Taking into consideration the Glock 19 3rd gen that I carry, and the Sig P220 .45ACP which is my bedside and house pistol, and one or two others in the safe...
The pistol I could keep, with the finest lockup, smoothest action, highest quality manufacture, greatest capacity, absolutely NEVER an FTF, blip, malfunction at all, totally reliable...
Would have to be my Sig P226 Navy!
As much as I really enjoy all of my other pistols, if the SHTF, the P226 Navy 9mm with the phosphated mags and internals would be right there by my side!

I have more practical stuff, but if I was forced to get down to one handgun, something really bad has happened anyway, so I'd go with this, as I've owned it for 21 years and carried it as a police officer. It's a S&W 6450 that's had a trigger job by Novak's .45 Shop way back when.

As much as Ive been trying to deny it, I keep coming back to the G26 as well...
Small enough to be easily concealed yet holds a respectable 11 rounds, can take G26, 19, 17 and 18 mags, add an xgrip and you have a g19...
It's just a perfect one and only.
