I butchered my own deer for the first time this year, this was some good useable info for the elk to come next weekend.

Pretty sure my Uncle could bone out a deer that fast without watching a video. Saw him do it on Caribou. I have been timed gutting one out in under a minute and a half.

Nice vid BB.
I sure can't do what he did "as fast as he did it" but those guys like him are doing a ton a week of them, like the boys in a packing house. I just wish I could keep my knife that sharp ! Ha.

The secret is the little hook thingy he used in his other hand. If I only had one of those hook thingys I could do it that fast too...

Yea, your absolutely right !
I knew about "the hook," from all the cattle processing that goes on around here, (i seen sense a kid). I just been 'to stupid to try it yet'. ha.
Man we got hay hooks, and I can weld up (build) one of those 'little hooks' in no time (as a hay hook is kinda big) ha.
I think on this 'lazy day' I am havin here, I might wander out to the shop and think on this some...
Thanks for the reminder and tip.. I'm still jealous of this dudes knife ! Ha.
I have to use a knife all the time out here, but I'll de dang If I can keep one sharp enough to last through the whole process of buthering a buck.
Stay safe amigo !

Without the "hook" he would be known as Stubby.

I thought my dad was fast at deer butchering, but that guy definitely wins. I like to keep the legs whole, run the shanks through the band saw "osso bucco" style, and cut the loins as bone-in chops or leave them whole as a standing rib roast.

I have to reserve the better 1/2 of a day to do that... I can fillet a fish as fast as most non-professionals, but to seperate a deer out completely izza gunna take a while..
