Damm I envy you. Seriously.
I'm in a Ocean attached state and I barely get maybe 1 -2 seat'in of good seafood per month. I do love tuna and Florida's white rock shrimp tho, but prices of seafood has been skyrocketing. And the best seafood outlet knows this and the prices are even higher.
What we are lacking are decent scallops and oysters. Ever since a local close-by bar closed ( Alligator Alley ) my choices of good cooked foods has disappeared like smoke in the winds of a hurricane

Born in N.O. lived in suburbs outside the big easy since I was two. N.O. is s great place to visit but you couldn't pay me to live there. The surrounding parishs (Counties in all other states) of Jefferson, St. Tammany and St. Bernard are a good place to live. Like anywhere else, they have good and bad neighborhoods.

I have to admit, only had crayfish once. Tasted like mud, smelled like carp. It was at a Chinese restaurant in virginia.
I'm willing to give them another try where they actually know how to cook them.

no sir, what you ate were ditch roaches, as in the nasty little crawdads found in roadside ditches in cities.
or they might have been actual crawdads but raised on a farm. those are usually pretty nasty too, they either taste like mud or dogfood. catfish is another meal that you run into that problem with.
and before anybody asks, no i don't eat the brains.

Good grief...yeah, you need to eat the real deal man. Anybody who eats imported crawfish at an Asian joint gets what they got comin' to 'em. People in Virginia don't even know how to properly boil crawfish, much less some Chinese joint.

Rule1 to not standing out down here, NEVER call them crayfish, always CRAWFISH!!!!!!
That abomination of Chinese importation you had is just as easily described as crapfish.
Rule 2 is never ask someone their recipe for boiling crawfish. Only rookies use a store bought powder only. It should always be supplemented with some...... WAIT. Im not giving up mine either. Hahahaha

It's not soda down here. It's either a coke(not Coke) or a cold drink.
I love the little name differences. We had a guy at my last job that called a cart(like shopping cart) a dolly and a dolly a truck. I forgot what he called a fork lift, though.
