Some hole in the wall I found in Crowley. I usually get it from Best Stop in Scott, but tried this and it's pretty damn good. Not too loose, not hard as a brick either. Some good green onion flavor in it too.

Their's (Best Stop) is a little more firm, no doubt. It holds up a little better when it gets room temp, whereas the looser ones start wanting to fall apart.

What part of LA do you live in where you only get 7-8 months of summer per year? Just kidding(but not entirely)
Seems like we skipped winter last year, but it's looking up so far this year.

Sad but true.
I really wish we were still West Florida instead of Mississippi.
The rest of the state thinks we are sinning coast trash anyway. If it wasn't for the three coastal counties and our economy/tax base, the rest of the state would be destitute.

To be fair, the STD thing is pretty much all on the city of Natchitoches itself. It's well known as the STD capital of the state (and possibly the country).

I always heard nack-o-trash... No offense to the city or peeps in general, there are some good people that I've met from there..
The summers are horrible, the food is great, the fishing is great, the roads are horrible, the winters are wet and mild, and the hurricanes are frequent..
I'm in the NW corner with no real cajun heritage here.. I do hang around crowds of them at the dragboat races though and they're fun to watch, but I just watch...

My family are the classic tradition bottom of the woods Louisiana creoles, and when they come to Florida and I take them to a a SEFLA so-called lousiana food spot they almost puke out their guts. I 'm always apologizing on behalf of this state for the sorry food options.
Even the worst eateries in Louisiana are 10x better than anything in Florida. I'm 100% dead serious about that.
People down here have no clue as to what creole cooking is and no proper ideal of how to us cayenne pepper and just sprinkling creole seasonsing on sometime does not make it Creole Food
And do get me started on cooking shrimp and Florida & how to make a proper roux

When I worked at dominos, our "Linten Special" was a Cajun shrimp pizza. To prep it, we quite literally emptied a bag of tiny, pre-cooked shrimp into a container and poured some Tony's on it and let 'me soak.
