Chicken and cheese:

Enough chicken for your family for a meal
1 can cream of mushroom
1 can cream of chicken
1/2 cup sour cream
handful of shredded mozzerella cheese
little bit of onion and garlic, finely choped
some flour
pinch or two of dried parsley
salt
pepper
green tobasco

steamed rice

Make rice, set aside, keep warm.

Cut chicken into cubes. Mix flour, salt, pepper and parsley. Coat chicken.

Put chicken in pan with cooking agent (oil, butter, cooking spray), and cook.

While the dead bird is cooking, mix the sour cream, soups, tobasco, salt and pepper in a bowl. When the chicken is just about done, add the soup mixture and heat. Add the cheese and let it melt.

Serve the chicken mixture over rice with a side dish.

If you're watching calories or saturated fat intake, use the reduced or no fat soups, sour cream and cheese.

Easy salsa:

1 can whole peeled tomatoes, with juice
1/2 cup onion roughly chopped
1/4 cup cilantro
few slices of fresh jalapeno
a few garlic cloves smashed
juice from at least 1 lime
onion powder
salt
pepper

Put it all in a food processor and pulse to desired chuckyness. I prefer 7-8 slices of jalapeno, doesn't make it spicy at all, just a bit zippy.

Nuclear Lava Cakes with Raspberry Sauce

Lava Cakes:

4 oz. bittersweet chocolate, finely chopped / processed
4 oz. unsalted butter, cut into thin pieces
3 large eggs
1/4 cup sugar
1.5 Tbs flour

Coat 6 6-oz. ramekins with cooking spray, and dust with flour

Melt chocolate and butter in double broiler (keep stirring)

Beat eggs and sugar with electric mixer for three minutes or until thick and pale yellow. Fold in chocolate mixture. Sprinkle with flour, and whisk to blend. Divide among prepared ramekins. Cover with plastic wrap and freeze for 6 hours or overnight.

Preheat oven to 400F. Place ramekins on baking sheet. Bake 15 minutes or until puffed and set around edges, but still a little soft in the center. Let stand 1 minute. Run knife around edges, invert onto dessert plates and serve hot.



Raspberry sauce:

2 pints fresh raspberries
1/2 cup water
3/4 cup sugar
2 Tbs. cornstarch

Crush rasperries with water in a saucepan. Add sugar and cornstarch. Bring to a boil, stirring constantly. Reduce heat and simmer 2 minutes. Push through strainer into bowl.


For presentation, drizzle sauce onto plate in thin lines, place lava cake in center of plate, drizzle thin lines of sauce over cake, adorn plate and cake with a few fresh raspberries and if desired, sprinkle a couple teaspoons of sifted confectioners sugar over everything.

Eggplant- normally a BLECH! for me, but......

While in Kali, Babysis made her own particular eggplant dish and MAN, it was great! I'll have to get her to type out her method/recipe when she gets a spare two minutes (or, perhaps she could delegate the task to one of her non-existent clones).

In any event, she slices it a certain way, soaks it in a salt brine for some period of time, does some certain seasonings, uses some certain sauce, and does some other magical stuff to and and voile la - the result is the ONLY eggplant dish I have ever wanted to eat AND enjoyed! In fact, deep in the dark of night I crept back into the kitchen and had seconds - and heretofore I HATED eggplant. Go figure.........

Mellow Duck Hunting Chili:

1 can of red beans
1 can of black beans
1 can of whole kernal corn
1 can of diced tomatoes
1/2 cup sugar
1/2 cup ketchup
1tsp liquid smoke
1tsp salt
2tsp lime juice
1tbs of honey
1/2 tbs of minced dired onions
Red Pepper, Chili Pepper, Fresh Ground Black Pepper, Franks "Red Hot Chili Lime" to taste.

1lbs 85/15 hamburger browned with water and drained


Combine goods in Crock pot on high for 2 hours, then turn to low for 4 hours and chow down.

This is my first submission but it is full of artery clogging goodness. I made this a few days ago while the little one was napping. Not sure if it has been done before, but I just kinda went with what I had in the fridge and viola!

Sweet and Spicy Sausage

1 pkg of fresh hot sausage (I prefer local made, not store bought)
1lb of thick cut peppered bacon
Bottle of maple syrup (I prefer the natural kind, $$ but totally worth it)
A case of your favorite amber or dark lager beer.


Put the sausage in to a pot and bring to a low simmer for 10min. Drink a beer.
At the same time soak 3 toothpicks for each sausage in beer in a bowl.
Remove the sausage/beer from heat.
Pre heat grill to low heat. Drink a beer.
Carefully wrap 2 two full slices of bacon around each sausage, using the soaked tooth pics to hold the bacon in place.
Place the bacon wrapped sausage on the grill, on low low heat for 1hr, closed lid. Watch game, drink a beer.
Check to be sure the bacon isnt burning. (You might want to or need to put the sausages on the upper rack of grill to keep flare ups down.) Drink Beer.

After one hour, you have two options, both while enjoying a beer.

Option 1: Turn the grill as high as it will go, wait a few min and drizzle the sausage with the maple syrup. Close lid and allow it to caramelize. Add more for a bit more sweetness. Becareful not to burn or char the bacon while doing this part.

Option 2: While still on the grill, drizzle the sausage with the maple syrup. Using a propane torch (the kind used to do plumbing) to caramelize the syrup immediately. Again, add as much as you like, but be careful to not burn or scorch the bacon.

Remove from grill, remove toothpicks and enjoy. Can be served on a plate or on a bun, also go great with whats left of that case of beer.

The toothpick soaking is important as it keeps them from catching on fire and burning the bacon. Feel free to change or add to this and post up you results.

I'm a lazy single man, so my recipes usually don't go beyond "open package, eat contents". But here is a favorite I would like to share. It's an egg sandwich... well, of a sort.

Ingredients for 1 sandwich (I usually make 4):
- 1 medium egg
- 1 slice of bread
- 1 slice of swiss cheese
- thick horseradish sauce in a squeeze bottle (Publix brand works for me)

Cut a large rectangular hole in a slice of bread. Do what you want with the cut out piece, I usually just throw it away. Put the slice on a hot frying pan for a minute or two (until the bottom side gets slightly toasted).

Turn the bread slice over. Put some olive oil or a piece of butter inside the hole (if your frying pan is Teflon and you are trying to watch your weight, skip this part).

Crack an egg and gently slip it inside the hole in the bread slice. Put some horseradish sauce on the egg (I usually make a bead of sauce around the yolk). Cover the frying pan.

Catch the exact moment when the egg yolk is just starting to get hard. Take the sandwich off the frying pan and cover it with a slice of cheese. Let the cheese melt. Enjoy.

Here's a favorite in the house this time of year:

Pumpkin Chocolate Chip Muffins
(makes ~24)

2 cups whole wheat flour
1 cup all-purpose flour
1 cup brown sugar
1 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon ground ginger (optional)
1/2 teaspoons ground cloves (optional)

3 eggs
1 (15 oz) can solid pack pumpkin
1/2 cup unsweetened applesauce
1/4 cup olive oil

1 cup semi-sweet chocolate chips

Pre-heat oven to 400° F
1. In a large bowl combine the dry ingredients.
2. In a separate bowl combine the wet ingredients.
3. Add the wet ingredients to the dry ingredients and mix by hand or with electric mixer on low until just moistened.
4. Stir in chocolate chips.
5. Line muffin tins with baking cups or lightly grease; fill 3/4 full with batter.
6. Bake muffins for 18-20 minutes or until a toothpick inserted into the middle comes out clean.
7. Remove to wire racks and cool.

Best when eaten warm!

Adapted from this recipe.

Hehe! I'm not sure they would survive a trip through the mail! I've heard of whole boxes of goodies "disappearing" and never seeing their destinations.

I think Mr. HE might be able to vouch for them, though.

Here's an easy recipe that I tried recently. I'm very picky about oatmeal, but this had really good flavor, wasn't runny and wasn't lumpy.

Slow Cooker "Whoa" Breakfast
(serves 4-6)

1 1/2 cups steel-cut or old-fashioned oats (I used steel-cut)
3 cups water
2 cups peeled and chopped apples
1/4 cup sliced almonds
1/2 teaspoon ground cinnamon
1/4 teaspoon salt

Combine all into a slow cooker, cover, and cook on low for 8 hours.

I like to add butter, honey and half and half to mine. Wish there was a way to add a little more protein to make it stick longer, but I'm not sure what I could add that would compliment the flavor.

I made this Pasta with Sausage, Tomatoes, and Cream for my mom and dad I took off this site and it was so good. No left overs, dad went to town big time on the rest
