Its a must if you process your own deer. Properly done I think the meat is better after being defrosted than wrapping in butcher paper.

Pat the meat dry with a paper towel, seal, and then freeze as quickly as possible. Dont overload the freezer all at once. Having some airspace will freeze the meat faster making it better when defrosted.
